So, from your answer I conclude that it is not necessary to make the child-Template default (which is impossible) but making the child-Style default is sufficient to create a second template-environment alongside the original Cassiopeia template.
The child-Style will overrule the original Cassiopeia Style and use the Favicons in its own folder child-folder.
Yes.

You can mark a template style as default.
You cannot mark a template as default.

Template styles are different versions of the same design (template).
I.e. You can have a design (template) with different colours (template styles).

It depends on the options of the template what different template styles you can create.

A website can have multiple templates and child templates.
A (child) template can have multiple template styles.

The default template style is... default, but you can select any template style from any template in the menu-item options.

The template is responsible for the favicons.
If you upload favicons into the the child templates image folder: Joomla will use childs favicons.
If you do not upload favicons into the child templates image folder: Joomla will use the favicons of the parent.
If the parent template has no favicons: Joomla will use the default favicons from the system image folder.
